Healthy Muffins without sugar and butter

Could you be anymore healthy? Recently bananas have become my go-to ingredient while baking. They are perfect replacement for butter in cakes and cookies and provide natural sweetness along with other nutrients. My second favorite is dark chocolate, packed with goodness it is the best when it is used alongside bananas. The powerful combination of these two ingredients results in guilt-free baking and eating of these healthy muffins.

In this recipe I have used slightly sweetened dark chocolate and overripe bananas. The sweetness came out to be perfect! However, if you prefer more sweetness, I would recommend you to use healthy sugar substitutes instead of refined white sugar to maintain this healthy muffins recipe. I personally used a tablespoon of this healthy dry fruits jaggery (Check it out). Further to make this recipe easy to make, I tried making the batter in a blender and it turned out to be perfect. Try it out.

Ingredients for healthy muffins recipe

  1. 3/4 cup whole wheat flour
  2. 3 tablespoons yogurt
  3. 1 overripe banana
  4. 1/4 teaspoon baking soda
  5. 1/2 teaspoon baking powder
  6. 1 whole egg
  7. 1 tablespoon cocoa powder
  8. 30-40 gm dark chocolate
  9. 1/3 cup milk
  10. 1 pinch of salt
  11. Roasted nuts of your choice
  12. 1 teaspoon chocolate essence (optional)
  13. 1 tablespoon Jaggery/ healthy sugar substitutes (If required) I recommend using this healthy dry fruits jaggery (Check it out).

Method

  1. Preheat the oven at 180° C and prepare a muffins mold tray.
  2. Put banana, egg, yogurt and dark chocolate in a blender and blend it until smooth.
  3. Add milk and stir well.
  4. Add flour, baking soda, baking powder, cocoa powder and salt. Mix well using a spatula.
  5. Pour the batter in the muffins tray and top with some crushed nuts of your choice.
  6. Bake in a preheated oven for 20-25 minutes or until a toothpick comes out clean.



Tadaaa! Mouth watering healthy muffins are ready to be enjoyed free of guilt. The bananas make it smell so good making it drool worthy and you can experience it once they are out of the oven. Consume it warm right from the oven or chill it in the refrigerator. I personally prefer warming them in the microwave for 30-40 seconds before consuming as they taste the best when slightly warm.
