Fluffy pancake recipe | As light as a sponge

Anything having “cake” in the title is simply irresistible and so is this fluffy pancake recipe. Easy to make, this instant pancake recipe will beat your craving for sweets. One of the convincing reasons why you should probably make a pancake right now is that you don’t need an oven/microwave! All you need is a regular pan.

What is a pancake?

Pancake is a flat round cake made with a similar batter that is used to bake cakes. Just like cakes, butter/oil is helpful in greasing the pan and pouring a little amount of batter at the center of the pan is all you have to do. It is flipped and cooked on both the sides. Like cakes, one can create layers by keeping the fluffy pancakes one over the other and apply frosting/ nut spreads in between. one can drizzle honey/maple syrup with a cherry on top. The only difference between cakes and pancakes is pancakes doesn’t require oven/microwave. Pancakes just require a pan, hence the name.   • Pan


  • 1 cup all purpose flour
  • 1 large egg
  • 3/4 cup milk
  • 2 tbsp sugar powdered/granulated
  • 1 tbsp lemon juice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 pinch salt
  • 1 tbsp butter


  • Combine milk and lemon juice. Keep them aside to curdle.
  • Meanwhile, Mix flour, sugar, salt, baking powder and baking soda.
  • Add curdled milk/torn milk/buttermilk and mix well.
  • Whisk egg until it turns all foamy. The foam is the secret to light and fluffy pancakes.
  • Gently fold the egg foam also known as meringue into the pancake batter.
  • Grease a pan with butter and pour one spatula of batter at the center.
  • Gently flip the pancake once it turns light brown on the downside. Do the same with the other side.


  1. Stack up your pancakes or eat them one by one. Drizzle some honey/maple syrup/nutella or any spread of your choice.
  2. Add some fresh fruits on top instead of any sweetener for a healthy sweetness along with fiber and other nutrients.
  3. Make sure you foam the eggs completely. Use electric beater for best results or whisk it with a whisker. Foamy eggs are the secret to fluffy pancakes.
