Last week, after knowing so many benefits of banana, I decided to bring some of the overripe ones (which I had been procrastinating that I will eat one day) into my baking kitchen. Baking banana muffins (Check out the recipe) and banana bread were two of the most delicious recipes of the week. Everyone in my family loved them and it has become a regular healthy dessert which we enjoy after dinner.

Banana bread recipe
Equipment
- Oven
- Mixing bowl
- Loaf pan
Ingredients
- 1 cup whole wheat flour
- 2 large bananas overripe
- 1/4 cup butter
- 2 eggs
- 1/2 cup brown sugar/jaggery/molasses
- 1/2 cup plain yogurt
- 1 tsp baking powder
- 1 pinch baking soda
- 1 pinch salt
- 1/2 cup nuts optional
Instructions
- Preheat the oven at 220° C and prepare a loaf tray by spraying butter/oil.
- Combine all the dry ingredients- flour, salt, baking powder and baking soda
- Beat butter and sugar until fluffy. This process is known as creaming.
- Add eggs to the butter and sugar mixer and beat well.
- Blend bananas in a blender and add it to the mixture.
- Lastly, add plain yogurt and mix well.
- Gently fold the dry mixture into this wet mixture until no lumps remain.
- Add nuts of your choice.
- Bake in a preheated oven for 45 minutes or until a toothpick comes out clean.
Notes
- Use overripe bananas for better sweetness and essence.
- If required you can replace some amount of butter with another banana or half.
- Adding nuts is totally optional. It gives a nice crunch to the bread.
- The amount of sugar can be adjusted as per your preferred taste.
- I have not used any essence to retain the natural essence of bananas.
